As much as I love certain pairs and whatnot, the characters are not gay until the creator specifically states so. K/S is great and all, and it may appear so so so perfect, but neither are gay. That’s just the facts of it. Kirk, for example, clearly stated he was only interested in women. I have never seen him hit/seduce/have sex/etc with a man.

Well, slash in itself is special because few creators would outright say their characters are gay or bisexual because they want an audience, and even today, especially in America, giving that attribute to a character is like shooting yourself in the foot. :/ So of course you’d never see Kirk take a guy to bed. Hell, they barely hinted that he slept with women. We had to figure that out by the fact that he was putting his boots back on in one episode, married and got a girl pregnant under amnesia in another, and the fact the he had a son.
I agree that Kirk and Spock are not gay. They are clearly interested in women, and in the TMP novel Kirk said he liked women best when he was confronted with the him and Spock as lovers rumor, and it shows this clearly in the series and movies. Are they 100% straight? *To me*, not necessarily. The biggest indicator, outside their own extremely slashy relationship, is the episode Tomorrow Is Yesterday when Kirk is outright flirting with that pilot guy. And yes, he is flirting, because if you replaced him with a female, everyone would know that Kirk was hitting on that. In fact, he stops hitting on him after he learns that the guy is married with a kid. Plus Roddenberry stated that Kirk and Spock’s relationship was such that if that (being homosexuality) was the way of the 23rd century, then it was sufficient for that. It’s the way he always edged around it, never saying ‘no they’re just friends dude’ and making up words like t’hy’la when there was no logical reason to do it.
Of course your argument is that slash isn’t real unless a creator says so, so my argument is still a matter of perception, thus we’re at a friendly impasse. But even though I’m clearly biased and think differently about this one pairing (every other slash pairing, I am in agreement with you), I still think that people who get angry or defensive or try to hurt other ships (like S/U, which actually IS canon) are really stupid and need to get a head check. Hell, even as nutty about the pairing as I am, I don’t even claim that reboot slash is canon at all. It’s nice to think that way, and I do admit that I’m convinced TOS was canon as it could be without outright saying it, but I don’t make shit up to support what I want.
